• Pound Cake •

"Everything is ready, Diana, except my cake which I'm to make in the morning, and the baking-powder biscuits which Marilla will make just before teatime." Anne of Green Gables, XXI.

I have a feeling Marilla would have made British Pound Cake in the book, and from my research, British pound cakes contained fruits. I tried looking for a recipe and the closest one I could find online was "Father Gesner's English Pound Cake":


*Note* Results may vary

- 1 cup butter or margarine
- 2 cups sugar
- 3 cups flour
- 4 eggs
- 2 teaspoons baking powder
- 1/2 cup hot water
- 1/2 cup milk
- 1 teaspoon salt
- 1 teaspoon lemon flavoring
- 1 teaspoon vanilla

1) Cream sugar and butter until light and fluffy.

2) Add egg yolks one at a tim, then add remaining ingredients alternately with milk and water.

3) Beat egg whites until they stand in soft peaks.

4) Fold into batter.

5) Spoon into large angel food cake pan and bake on hour in a 350-degree oven.
